American Comfort Food

Tues. March 2, 6:30pm-9:30pm

New Class.  Let’s have the comfort without all the heavy calories, but with 100% taste…….

We will make steamy dill cheddar corn muffins, chicken chili., a warm cabbage salad with crispy bacon and fresh apples and blue cheese……..Then dessert . . . how about a chocolate chip CAKE!  Even better than your favorite cookie. By the end of class, you will be in comfort heaven.

Knife Skills/sharpening, and cooking class!

Tues March 9th, 6:30 - 9:30 p.m.

First-time class!  This is an excellent opportunity to have two of your personal knives sharpened.  Bring two knives that need sharpening, and Al Quebec, our knife lecturer, will bring the necessary equipment to sharpen them in class!  Learn how to buy and handle knives, and chop and slice to your heart's content.  We will practice these techniques, so it is imperative that you bring knives in.  We will make a French onion soup, a vegetable curry from scratch, and Peking sesame beef. 

 

Sushi Making

Tues March 23rd, 6:30 - 9:30 p.m.

Back by very popular demand.  Tonight will be a hands-on workshop of making California Rolls, Philadelphia rolls, Ahi, Shiitake Maki, and cucumber rolls.  In addition, we will make a classic Miso soup along with a delightful Asian salad with scallions, sesame seeds, and radishes in a ginger and rice vinegar dressing.

 

Make Ahead for a Buffet Party!

First-time class.  Want to have a party, but don’t want the stress of planning the buffet?  What can you make ahead and what must be made last minute?  Well, tonight all of our dishes can be made ahead without compromising the flavors.  You can enjoy your party and not have the stress!  We will make an Artichoke, cheddar, and scallion frittata cut in elegant diamonds as an appetizer…a beautiful chicken, mushroom, lemon, sundried tomato with herbs de provence dish in a creamy wine sauce…followed by Orzo with caramelized shallots, oregano, and olives.  Lastly, dessert..decadent chocolate chip bottomless cupcakes with a cream cheese filling.

 

Appetizers Sure to Please!

New Class!  Does your appetizer repertoire need a boost?  Do you always bring the same dish to a party?  Tonight is your chance to learn new kitchen techniques and some fresh ideas for your next gathering.  We will make Ruby port soaked dried figs with proscuitto, and gorgonzola in a home made won ton cups.  Smoked Salmon and goat cheese quesadilla with horseradish and dill.  How about a guitless Mushroom Pate with savory mushrooms, sherry and parsley….Ad last but not least an Asian Eggplant like no other, it is julienned and cooked slowly with sesame seeds and soy and served on a home made crostini.  Out of this world!

 

Cheese, cheese and more Cheese with Guest..The Milk Pail’s Steve Rasmussen

New Class…..Back by popular demand, Steve Rasmussen from the Milk Pail in Mountain View will come and discuss aspects of many cheeses.  He has been here before, but will discuss new and different cheeses.  We will focus on several including triple creams, soft cheeses from Europe, and Goat cheeses.  Yannette Edwards will demonstrate how to make savory Rosemary, Parmesan Crackers, Goat cheese wrapped grapes rolled in crushed pistachio nuts, and a Goat cheese, mushroom Crostini.  Don’t miss this class, with lots of sampling!

 

Mexican Fiesta

Tues. May 4th, 6:30pm-9:30pm

New Class. Get ready to Celebrate Cinco de Mayo a day early!  We will make the best-ever home made Guacamole…( I will share several Margarita recipes, award winning from Cancun!)  We will make a traditional Tortilla Soup direct from Guadalajara with all the trimmings of avocado, cilantro, Monterey Jack cheese and cumin…Next, it is Baja Shrimp, with green chilies and tequila and lastly Mexican chocolate cake with cinnamon.  Yum!

 

Cooking for Singles……or a special someone.

First time class.  Tired of coming home from work, uninspired?  Don’t know what to prepare for just 1?  Maybe you have a date and want to make something special but not too fussy but full of flavor.  Come to class tonight and be inspired by these wonderful dishes.  Black and White Sesame Chicken Breasts with a rice vinegar/cilantro marinade.  Pork Medallions with a green peppercorn and Dijon/wine sauce. Almond Crusted salmon with capers and lemon.  And lastly a Mango chutney Chicken.  It is all inspiring!

 

Fundamentals of Entertaining Workshop

Tues. May 18th, 6:30pm-9:30pm

New Class!  Tonight we will break down the elements of party planning and scheduling.  You will learn how to plan menus, set an elegant table, fold napkins, make the most of decorating with what you have.  Invitations, choosing and buying wine, cocktails - bring your questions!  We will also make Grapefruit minted ice, a perfect in-between course ( palate cleanser)  also an elegant scallop ceviche in a mini martini glass.

 

Pasta and Risotto

Tues. May 25th, 6:30pm-9:30pm

Two of my favorites and yet they are often made incorrectly or over done, or mushy.  Tonight learn the secrets to making perfect pasta and creamy risotto.  We will make four dishes:  Lemon Broccoli  risotto, Smoked scallop and hazelnut fettucini in a creamy sauce.  Pasta Amatriciana:  a fusilli pasta with tomatoes, pancetta, olives, capers in a spicy sauce.  Risotto with onions, smoked salmon in a cognac reduction with capers and lemon.

 

Spectacular Summer Salads

New Class Summer heat is just around the corner and you want to be ready with some cool and refreshing salads.  Something different…  Tuna Carpaccio with spicy Arugula and shallots, South Seas Beef Salad with Thai Basil, ginger, mint and Cilantro.  An unusual 3 bean salad, Edamame, black and white bean salad with red onion, celery, in a lime dressing.
