Black Bean Chicken
We made this dish up one night, it has so many good-tasting Asian ingredients!!
Always serve this spicy dish with white Jasmine rice!!
2 teaspoons ginger root, peeled and minced
1 large clove garlic, minced
3 boneless, skinless chicken breasts, cubed in 1/2"
1/2 medium onion, chopped
1 tablespoon fermented black beans, mashed
1 tablespoon soy sauce
1 tablespoon rice wine
1 tablespoon water
1 teaspoon chili paste
pepper
2 tablespoons water
3/4 teaspoon cornstarch
1 green bell pepper, in 1 inch squares
In a heavy medium skillet over medium-high heat add oil, onion, and ginger. Saute 2-3 minutes, then add garlic. Saute for 30 seconds, add chicken pieces and cook for 3-4 minutes. While chicken is cooking in a small bowl, combine black beans, rice wine, soy, one tablespoon water, and chili paste. Pour mixture into skillet and toss ingredients to coat. Add bell pepper and cook for 2-3 more minutes. Combine remaining water and cornstarch together in small bowl and whisk in skillet. Season with pepper and serve.
